Recipe of the WEEK: Crusted Salmon Steaks
4 salmon steaks

¾ c. dry bread crumbs

½ c. Parmesan Cheese

1-½ T. chopped parsley

½ tsp. salt

½ tsp. paprika

¼ tsp. pepper

1 egg, beaten

2 T. butter

2 T. oil

Combine crumbs, Parmesan, parsley and spices. Dip salmon in egg, then in crumb mixture. Fry in butter and oil until golden, turning once. Drain on paper towels and serve with lime sauce.

Creamy Lime Sauce

½ c. mayonnaise

¼ c. plain yogurt

2 T. lime juice

½ tsp. sugar

1/8 tsp. paprika

2 tsp. honey

¼ tsp. curry powder

Blend ingredients well. Serve with crusted salmon.
