Recipe of the WEEK
Wild Alaska Salmon with Wild Cranberry Onion Relish
2 c. cranberries 1-½ c. dark brown sugar

¼ c. chopped white onion ¼ c. water

1-½ tsp. salt ¼ tsp. pepper

1 T Worcestershire sauce ½ c. chopped green onions

1 lemon, cut in 8 wedges

In medium saucepan combine, cranberries, brown sugar, white onion, water. Stir constantly over low heat until sugar is dissolved. Add salt and pepper; simmer covered for 10 min until onions are just tender; stir occasionally. Stir in Worcestershire sauce; set aside. Brush both sides of salmon fillet with oil. Grill just until opaque at center. Place fillet on top of relish on each dinner plate. Sprinkle with chopped green onions; garnish with lemon.
